Rainbow Greens with BACON!

Add bacon to anything and it automatically makes it taste SO. MUCH. BETTER.. right??

That is definitely the truth to this dish! This meal is a twist on your classic collard greens and bacon.... but way more veggies, and way more FLAVOR. We pair this dish with quinoa for the perfect, savory, veggie filled dish.

 

Ingredients:

  • 1 package Bacon (organic, antibiotic/hormone free, nitrite/nitrate free)

  • 1 bunch Kale

  • 1 bunch Collard Greens

  • 1 bunch Chard

  • 1 Onion

  • 2 Tbs minced Garlic

  • Spices of choice- we like paprika, sea salt, pepper, and turmeric

  • Other veggies of choice (rainbow)- we like tri-colored bell peppers and radishes, but the possibilities are endless!


Instructions:

  1. Chop up all the veggies and set aside.

  2. Cut the bacon into pieces, and begin to fry in a large pan with your onion and garlic. (We use a wok) Stir frequently.

  3. After a few minutes, add in all the veggies except for your greens, and any spices.

  4. Once the onions have caramelized, the bacon is fully cooked, and other veggies are tender, it's time to add your greens!

  5. Add a handful of your chopped greens one at a time. Let it cook down a little, then add another handful. You'll repeat this until all the greens are cooked down. You will want to stir constantly. This will prevent your greens from burning and help all the ingredients in your dish to combine well.

  6. Once all the greens are cooked down- your dish is complete!

  7. Pair with Quinoa!
