There is nothing like a bowl of fresh and flavorful pico de gallo! Ripe, juicy tomatoes and spicy, crisp jalapenos make this appetizer come to life! This summer, my husband and I decided to join a farm share- and it has been FANTASTIC! Fresh, local, organic produce each week- what could be better!? This dish was inspired and derived from the produce we received in our share this week! It's simple, easy, and something the whole family will love!
Ingredients:
2 Pints Cherry Tomatoes
1/2 an Onion
1/4-1 cup chopped Cilantro
2 Jalapenos- seeds removed
1 Tbs. Minced Garlic
Juice from 1 Lime
Sea Salt to taste
Instructions:
Chop up the cherry tomatoes, onion, cilantro, jalapenos, and garlic.
Mix in a bowl, adding the juice of one lime, and sea salt to taste.
Pair with your favorite tortilla chip!
