Our family loves a hearty soup in the winter – in thinking about what we could eat on the Standard Process 21-day Cleanse, we spent a few days researching to find our favorite tomato soup recipe. We combined a few recipes that we found online, and a favorite was born! Check out how we made this below.
Ingredients
2 teaspoons olive oil
1 small red onion (finely chopped)
1 stalk celery (finely chopped)
2 cloves garlic (minced)
½ cup fresh basil chopped (chopped)
1 teaspoon thyme leaves (fresh)
2 14-ounce cans diced tomatoes (no salt added)
2 cups chicken broth (non-fat and low-sodium, or vegetable broth)
Instructions
1. In a saucepan, sauté the onion, celery, garlic, basil and thyme in your olive oil until the mixture is tender.
2. Slowly mix in your diced tomatoes and broth.
3. Bring the mixture to a boil, stirring frequently.
4. Reduce heat and simmer for 20 minutes.
Remove from heat and use an immersion blender (we use this one) to finely chop all ingredients until the soup consistency is to you liking.
