Finely Chopped Salsa With Beans

If you ask me what I eat the most frequently (both on and off the cleanse), the answer will always be salsa. My family really likes to experiment with different flavors of salsa, and now that we’ve found all of these healthy tortilla chip options (Siete & Hippeas, to name a few) we wanted to share our favorite salsa recipes with you, too! We whipped this salsa up over the weekend and it was too good not to share. This recipe is a great alternative to the store-bought salsas with added sugars or large amounts of salt. It makes a good side dish, a great light lunch, or a nice afternoon snack.

Ingredients

1 green pepper

1 red pepper

1 orange pepper

1 yellow pepper

1 sweet onion

½ cup jalapeños

1 tablespoon garlic

1 cup fresh cilantro

1-10 ounce can of Rotel tomatoes with green chilis

1 tablespoon lime juice

2-15 ounce cans of black beans

1 teaspoon Pink Himalayan salt

½ teaspoon freshly cracked pepper (optional)



Instructions

1. Drain the Rotel tomatoes and add to a bowl.

2. Cut all vegetables into small pieces – the smaller your pieces, the better overall flavor your salsa will have. Add to bowl.

3. Add lime juice, black beans, salt and pepper to taste.

4. Mix well & enjoy!
